i have a 2005 GMC jimmy ZR2
and have been considering to get rid of the summer car to make the jimmy a beast.

this seems like the place to get some information

i see that there are lots of manuals and others doing conversions on the old body style s10's and blazers. but is there anyone that has done a swap on the new body style? or knows of any books or reading material i can get my hand on to see if this is feesable??

The new body style swap is pretty much the same as the First Gen S series. There is more wiring to deal with. I believe the ZR2 frame is a little bit wider, I know the rear end is a little wider than a regular or ext cab S10/S15. This swap has been done, search the forum and you'll find more info.
