I just finished putting my motor together and will hopefully be firing it up in the morning. I have 2 ground wires running off the battery to the block. Do I really need both? They've been there since I bought the truck but the less wires the better, right.

keep a ground strap from motor to frame and from bat to motor/or frame both are needed for full chassis grounding and also motor must be grounded to frame..G

Exactly. Just make sure that whatever ground straps or jumpers you use in the path between the battery and the engine block are LARGE wires, at least #2. The grounds to the chassis and body (don't forget the body) can be smaller, #10 should be OK.
