I bought a 85 blazer with a blown engine. I want to build it to be a daily driver.I have two options.Replace the 2.8-V-6 with another V-6 or do a V-8 conversion.I want to retain the ac in it.What is the best way to retain the ac and still run cool?

The 2.8l you already know is no powerhouse. The 85 is a carb engine, and has less power than a fuel injected one a couple years newer.
The v8 can be done and still have the ac hooked up. As far as I ve seen the rad and condenser needs to be moved to the forward most postion. I\'d recomend a smaller v8 instead of a built 350. The 305 should generate less heat and cool a little easier.
The taurs electric fan is a 2 speed fan. It could be hooked up to come on full blast when the ac is on. Someone here listed a post with a detailed wiring diagram for the application.

I agree with Space, go with a 302 and get a complete takeout from the junkyard. I got mine complete with the AC. In Texas you should find lots of engines with the AC on them.
